looks amazing... does white asparagus have a strong different flavor i see that you use it quite a bit... is the garnish on the side of the chicken the braised celery? I am horrible with figuring out what is what not a good identifier...ahaha

I just had white asparagus trimmings lying around. Always good for puree.
And yes, that is celery.

interesting.... what do you put with your puree to give a smooth texture? cream?
